Named after the Benedictine monk Pierre Pérignon, Dom Pérignon has its origins in the abbey of Hautvillers, where he was established in 1668 and devoted nearly half a century to perfecting the art of wine. A visionary, he helped improve blending and winemaking techniques, thus contributing to the growth of Champagne wines and their reputation for their finesse and complexity. If the legend attributes to him the invention of champagne, his role relates more to decisive innovations in a collective work which transformed still wines into sparkling wines. Faithful to the original ambition of “creating the best wine in the world”, the Dom Pérignon house today perpetuates this heritage through an exclusively vintage approach and a constant search for excellence, embodied in particular by its Cellar Master Vincent Chaperon since 2019.

Tasting

The Dom Pérignon Vintage 2015 reveals a complex and refined tasting experience. On the nose, it opens with roasted and cocoa notes, before evolving into an elegant floral bouquet combining linden, jasmine and peony, enhanced with a subtle spicy touch. A vegetal and fruity freshness then appears, with aromas of chlorophyll, orange peel and green papaya. On the palate, the attack is delicate then amplifies with generosity, carried by flavors of fresh peach and nectarine, enriched with nuances of citrus and gentian, stretching into a long, sapid and slightly bitter finish.
