Since May 2015, the Schmid-Haguenin family has been working to bring Château L’Escarderie back to life. Committed to Organic Farming with a view to certification in 2018, the owners make it a point of honor to make a real wine, as natural as possible. The harvest and many works are done manually. The 19th century cellar, with a very clever semi-buried design, allows natural regulation of the temperature and a gravity supply of the harvest. It is only the yeasts naturally present on the berries that will trigger fermentation. Throughout the entire vinification and maturation process, a professional oenologist monitors the winemaking process. Impeccable control of the sanitary state makes it possible to considerably reduce the quantity of sulfur necessary for good storage of the wine.

Tasting

Passion is a red wine with an intense color, with aromas of red fruits and an ample fruity note. It has an exceptional length in the mouth. It is a typical product of this region which has a thousand-year-old tradition for the production of quality red wines.
