Located in Cadaujac, in the heart of the prestigious Pessac-Léognan appellation, Château Jaulien extends over 9.27 hectares of vines planted on a sandy-gravelly terroir, resting on a subsoil of deep gravel. Since 2004, David Castaing has produced exclusively red wines there, with an average of 55,000 bottles per year. The estate maintains a strong agricultural base, combining viticulture with floral production - notably that of lily of the valley - as well as cow breeding, testimony to a living and diversified rural heritage. Vinification relies on modern equipment, notably thermoregulation, for perfect control of fermentations. The aging then takes place in barrels, with two to three rackings, then ends in stainless steel vats in order to preserve the balance of the wine without excess woodiness.

Tasting

A wine full of finesse, with a dark and intense color. The nose seduces with its aromas of ripe black fruits, enhanced with subtle notes of spices and undergrowth, providing beautiful depth. On the palate, the attack is supple, the wine is distinguished by its balance, its freshness and its harmonious structure, offering a tasting that is as pleasant as it is elegant. It goes perfectly with meats of character such as tournedos, grilled rib of beef or duck breast, and will also go well with a platter of mature cheeses.
